This is the easiest paleo recipe ever! Paleo Zucchini Bacon Bites! Great for breakfast, lunch, dinner or a snack in between! We serve ours with delicious guacamole!

Serves: 5 (5 bites each)

Prep time: 10 minutes

Bake time: 25 minutes

Stuff you need

  • 2 medium zucchinis, grated
  • 2 slices of bacon, diced
  • 2 shallots, finely chopped
  • 2 eggs, whisked
  • ¼ cup coconut flour
  • 1 tbsp. fresh dill chopped
  • Salt + pepper

Now What?

  • Preheat oven to 400°F and line a baking tray with parchment paper.
  • Place the grated zucchini in a bowl and use a paper towel to squeeze out excess liquid.
  • Add the bacon, shallots, dill, and eggs to the zucchini and stir well.
  • Sift the coconut flour into the zucchini mixture, season with salt and pepper, and mix until combined (by now your triceps should be saying “hello!”).
  • Take spoonfuls of the mixture and mold them into bite-sized balls.
  • Place the bites onto the baking tray and bake in the oven for 25 minutes or until golden brown.

We served ours with delish guacamole!
