One of my all time favourite “sort of healthy” treats is the Sweet Potato Brownie.  I found the recipe on paleOMG’s website (  Juli Bauer is the creator of paleOMG and she posts everything from amazing recipes, to workouts to fashion.  Her quirky sense of humour and zest for life and CrossFit make her blog a staple for me.  Check it out when you have a chance because you will not be disappointed.

Back to the brownies; it will feel like an angel cried on your tongue when you taste these.  The real struggle will be how not to eat them all in one day!  (It is important to remember that just because these are paleo does not mean they can be gorged on.  They are still a treat!!)

  • 1 sweet potato
  • 3 eggs, whisked
  • ¼ cupGold Label Virgin Coconut Oil, melted
  • ⅓ cup raw honey
  • ¼ teaspoon vanilla extractBrownie
  • 3 tablespoonsCoconut Flour
  • 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • pinch of salt
  • ½ cup Enjoy Life Chocolate Chips
